Prepare bread and spread

Bring butter to room temperature if cold. Spread 1 tablespoon of butter evenly on one side of each of the four bread slices. On the opposite (unbuttered) side of two slices, spread 1/2 teaspoon Dijon mustard on each. If using mayonnaise instead of butter on the outside for extra browning, spread mayo on the outside and reduce butter accordingly.

Assemble sandwiches

Place one mustard-spread slice butter-side down on a cutting board. Layer 2 slices of ham evenly on top, then 1 slice cheddar and 1 slice Swiss (or two cheddar slices) on top of the ham. Sprinkle about 1/2 teaspoon black pepper across the cheese. Top with the remaining bread slice, butter-side up, to form the sandwich. Repeat assembly for the second sandwich.

Preheat pan and cook

Heat a heavy skillet or nonstick pan over medium-low to medium heat. Place one sandwich in the skillet. Cook 3–4 minutes on the first side, pressing gently with a spatula occasionally to encourage even contact and melting. When the first side is golden brown and the cheese begins to soften, carefully flip the sandwich and cook the second side 3–4 minutes until golden and the cheese is fully melted. If the bread is browning too quickly before the cheese melts, reduce heat to low and cover the pan with a lid for 1–2 minutes to trap heat and finish melting.

Finish and serve

Transfer the grilled sandwich to a cutting board and let rest 1 minute. Slice diagonally or in half as desired. Serve hot. Repeat cooking for the second sandwich. Optional: serve with pickles, tomato soup, or a small salad.
