Onions & Shallot Jam
Caramelize onions and shallot
Heat 1 tablespoon olive oil in a medium skillet over medium-low heat. Add the thinly sliced yellow onion and shallot, sprinkle 1 teaspoon brown sugar and 1/4 teaspoon salt. Cook, stirring occasionally, until the onions are soft and golden brown, about 12–15 minutes. If they begin to stick, add a splash (1–2 teaspoons) of water. Stir in 1 teaspoon balsamic vinegar at the end, cook 1 minute more, remove from heat and set aside.
Blue Cheese Topping
Prepare blue cheese spread
In a small bowl combine 3/4 cup crumbled blue cheese with 2 tablespoons softened cream cheese and 1/4 teaspoon black pepper. Mash together with a fork until mostly combined but still a little chunky. Taste and adjust pepper as desired. Refrigerate until ready to use.
Burger Patties
Form patties
Place 1 pound ground beef in a bowl. Add 1 teaspoon Worcestershire sauce, 1/2 teaspoon garlic powder, 1 teaspoon salt and 1 teaspoon black pepper. Gently mix just until combined; avoid overworking. Divide into two equal portions and form into patties about 3/4 inch thick with a slight depression in the center of each to help them cook evenly.
Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat. Add 2 tablespoons butter or neutral oil and let it get hot but not smoking. Add the patties and cook without moving until a brown crust forms, about 3–4 minutes. Flip and cook the second side 3–4 minutes for medium (internal temp ~140–145°F / 60–63°C). During the last 1–2 minutes of cooking, spread about half of the blue cheese mixture (approximately 2 tablespoons) on each patty and cover the skillet for 30–60 seconds to melt the cheese slightly. Remove patties and rest 3–4 minutes.
To Assemble
Toast buns
While patties rest, melt 1 tablespoon butter in a clean skillet over medium heat. Place bun halves cut-side down and toast until golden and lightly crisp, about 1–2 minutes. Remove from heat.
Assemble burgers
Place a toasted bottom bun on a plate. Top with a small handful (about 1/2 cup) of arugula or baby greens, add the rested blue-topped patty, spoon 2–3 tablespoons of the caramelized onion & shallot jam over the patty, sprinkle a pinch of coarse black pepper if desired, and finish with the toasted top bun. Serve immediately.
