Prepare the Gelatin

In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes to bloom.

Heat the Cream Mixture

In a saucepan, combine the heavy cream, sugar, and a pinch of salt. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling.

Combine Gelatin and Cream

Remove the saucepan from heat. Add the bloomed gelatin to the hot cream mixture and stir until fully dissolved.

Add Champagne and Vanilla

Stir in the champagne and vanilla extract until well combined.

Chill the Mixture

Pour the mixture into serving glasses or ramekins. Cover and refrigerate for at least 4 hours or until set.

Once set, serve chilled. You may garnish with fresh berries or a drizzle of fruit sauce if desired.
