Preheat and prepare
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it; for crispier fries, use a wire rack set on the sheet.

Cut sweet potatoes
Wash and peel (optional) 2 cups worth of sweet potato (about 2 medium sweet potatoes). Cut into even 1/4- to 1/2-inch thick sticks so they cook uniformly. Aim for roughly 6–8 oz of potato per cup measured after cutting.

Dry and dust with cornstarch
Pat the cut fries very dry with a clean kitchen towel or paper towels. Place the dry fries in a large bowl and sprinkle 1 tsp cornstarch over them. Toss thoroughly to coat evenly—this helps create a crisp exterior.

Season and oil
In a small bowl combine 2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp ground cumin, 1 tsp kosher salt, 1/2 tsp freshly ground black pepper, and 1/4 tsp cayenne (if using). Pour the oil-spice mixture over the cornstarch-coated fries and toss until every fry is lightly and evenly coated.

Arrange on sheet
Spread the fries in a single layer on the prepared baking sheet (or on the wire rack). Leave a little space between pieces so hot air can circulate — crowding will cause soggy fries. If necessary, use two sheets.

Bake and turn
Bake at 425°F (220°C) for 12 minutes. After 12 minutes, remove the sheet and carefully flip the fries with a spatula to promote even browning. Return to the oven and bake an additional 8–12 minutes until edges are golden and crisp and centers are tender. Total bake time will be about 20–24 minutes depending on thickness and oven.

Finish and garnish
When fries are done, remove from oven and immediately taste for seasoning — sprinkle a little extra kosher salt if needed. Transfer to a serving platter and garnish with 1 tbsp chopped fresh parsley. Serve hot.
Dipping Sauce (optional)

While the fries bake, make the dipping sauce: in a small bowl combine 1/4 cup mayonnaise, 1/4 cup sour cream or Greek yogurt, 1 tbsp lime juice, 1 tsp honey, 1/2 tsp hot sauce (optional), 1/8 tsp salt, and a pinch (1/16 tsp) of black pepper. Whisk until smooth and refrigerate until ready to serve. Adjust seasoning or sweetness to taste.
