Soak breadcrumbs
In a small bowl, combine the breadcrumbs and milk. Let sit 5 minutes until the crumbs absorb the milk and become creamy.

Sauté aromatics
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the finely diced onion and a pinch of salt; cook 4–5 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant. Remove from heat and let cool slightly.

Mix meatloaf
In a large bowl, combine ground beef, ground pork, soaked breadcrumbs, cooled onion-garlic mixture, egg, Worcestershire sauce, Dijon mustard, chopped parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper. Use your hands or a sturdy spoon to mix just until combined — do not overwork, about 30–60 seconds.

Shape and glaze
Transfer mixture to the prepared loaf pan and press gently to fill, smoothing the top. In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Brush half the glaze evenly over the top of the meatloaf.

Bake
Bake in the preheated oven 45–55 minutes, or until the internal temperature reaches 160°F (71°C). About 15 minutes before the end of cooking, brush remaining glaze over the meatloaf to form a glossy top.

Rest
Remove meatloaf from oven and let rest in the pan 10 minutes. Run a knife around the edges, lift using parchment overhang (if used), and transfer to a cutting board. Rest another 5 minutes before slicing to retain juices.

Mash and whip
Mash potatoes using a potato masher or ricer until mostly smooth. Add 2 tablespoons butter and 3 ounces Boursin cheese. Pour in warmed heavy cream and continue to mash/whip until smooth and fluffy. Season to taste with 1/4 teaspoon black pepper and additional salt if needed.

Blister beans
Heat a large skillet or cast-iron pan over medium-high heat until hot. Add 1 tablespoon olive oil and the trimmed green beans. Sear, stirring occasionally, until blistered and bright green with some char spots, about 6–8 minutes.

Season
When beans are nearly done, sprinkle smoked paprika, ground cumin, red pepper flakes, and 1/2 teaspoon salt over the beans. Toss to coat and cook another 1–2 minutes to bloom the spices.
