Halibut with Bacon-Parmesan Crust

Preheat and prepare bacon
Preheat oven to 425°F (220°C). Line a small rimmed baking sheet with foil. Lay bacon slices on the sheet and bake 12–15 minutes until crisp. Remove and drain on paper towels. Reserve 1 teaspoon bacon fat (optional) for the crust; discard excess.

Make crust mixture
Finely chop the crisp bacon. In a small bowl combine chopped bacon, 3 tablespoons grated Parmesan, 1 tablespoon panko breadcrumbs, 1 tablespoon finely chopped parsley, lemon zest, and 1 tablespoon olive oil (or reserved bacon fat). Mix until the crumbs are evenly moistened. Season with a pinch of salt and 1/4 teaspoon black pepper.

Prepare halibut
Pat halibut fillets dry with paper towel. Season both sides with 1 teaspoon salt and 1/2 teaspoon black pepper. Place fillets on a lightly oiled baking sheet or in a shallow ovenproof pan with a little space between each piece.

Apply mustard and crust
Brush the top of each fillet evenly with about 1/2 teaspoon Dijon mustard (total 2 tsp across fillets). Press the bacon-Parmesan mixture onto the mustard-coated side of each fillet, forming a compact crust (use all of the mixture).

Bake the halibut
Bake in the 425°F (220°C) oven for 10–14 minutes, depending on thickness, until the fish is opaque and flakes easily with a fork and the crust is golden. Internal temperature should reach 135–145°F (57–63°C) depending on preferred doneness. If crust needs more color, broil 1–2 minutes while watching closely.

Rest and finish
Remove from oven and let rest 2–3 minutes. Spoon a few drops of lemon juice over each fillet before serving, and garnish with remaining chopped parsley if desired.

Warm dairy
While potatoes cook, warm 4 tablespoons butter and 1/2 cup milk together in a small saucepan over low heat until butter melts and mixture is warm (do not boil).

Mash and season
Drain potatoes well and return to the hot pot. Mash with a potato masher or ricer until mostly smooth. Add warm butter-milk mixture a little at a time until you reach desired creaminess. Stir in 2 tablespoons sour cream (optional), 1 1/2 teaspoons salt, 1/2 teaspoon black pepper, and 1/2 teaspoon garlic powder. Taste and adjust seasoning. Keep warm until ready to serve.
Roasted Broccoli

Roast broccoli
Toss broccoli florets with 1 1/2 tablespoons olive oil, 3/4 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon red pepper flakes (if using) on a rimmed baking sheet in a single layer. Roast in the same 425°F (220°C) oven (can roast simultaneously with halibut if space allows) for 12–15 minutes until edges are browned and tender-crisp.

Finish
Remove from oven and immediately toss with 1 teaspoon lemon juice if desired. Taste and adjust seasoning. Serve hot.
