Soup Preparation

Caramelize the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

Deglaze the Pot

Add the dry white wine to the pot to deglaze, scraping any browned bits from the bottom. Cook for an additional 5 minutes.

Add Broth and Herbs

Pour in the beef broth, add the bay leaves and thyme, and season with salt and pepper. Bring to a simmer and let cook for 20-30 minutes.

Prepare Topping

In a separate pan, sauté the Beech mushrooms until golden. Set aside.

Serve the Soup

Remove the bay leaves from the soup. Ladle the soup into bowls, top with sautéed Beech mushrooms, and add a dollop of Boursin cheese on top. Finish with a drizzle of pepper jelly and garnish with pea shoots.
