Prepare the Salmon

Season the salmon fillets with blackening seasoning, salt, and pepper on both sides.

Cook the Salmon

Heat olive oil in a skillet over medium-high heat. Add the seasoned salmon fillets and cook for 4-5 minutes per side, or until blackened and cooked through.

Prepare the Brussels and Peppadew

In another pan, sauté Brussels sprouts and Peppadew peppers in olive oil over medium heat until the Brussels are tender and slightly caramelized.

Make the Curry Cream

In a small saucepan, combine heavy cream and curry powder over low heat. Stir until warmed through and well combined.

Plate the Dish

Serve the blackened salmon on a bed of dirty rice, topped with sautéed Brussels and Peppadew, and drizzle with curry cream. Garnish with micro leeks.
