Scrambled Eggs

Method

Scrambled Eggs

1

Whisk eggs

Crack 2 large eggs into a small bowl. Add 2 tablespoons milk, 1/4 teaspoon salt (use half for very young children) and a small pinch of black pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy.

2

Heat pan

Place a nonstick skillet over medium-low heat. Add 1 teaspoon butter and let it melt and foam but not brown.

3

Pour the beaten eggs into the warm skillet. Let them sit undisturbed for about 10–15 seconds until the edges begin to set.

4

Using a silicone spatula, gently push the set edges toward the center, tilting the pan to let uncooked egg run to the edges. Continue this gentle folding action until the eggs are softly set but still moist, about 45–60 seconds more. Remove from heat when slightly underdone; carryover heat will finish them.

5

Stir in chopped chives if using and adjust seasoning to taste. Serve immediately.

Bacon

6

Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if you have one. Lay 2 bacon strips on the rack or directly on the foil without overlapping. If you want a touch of sweetness, lightly brush 1 teaspoon maple syrup on each strip.

7

Bake for 12–15 minutes for thin bacon (12 minutes for less crispy, 15 for crisper). Watch closely the last few minutes to avoid burning. Remove and transfer to a paper towel-lined plate to drain. If using a skillet, cook over medium heat 3–4 minutes per side until crisp, draining on paper towels.

Fresh Fruit

8

Rinse all fruit under cold running water. Pat dry with a towel.

9

Hull and halve the strawberries if large. Leave small strawberries whole. Remove grapes from stems and halve them for younger children to reduce choking risk. If serving to a toddler, chop all fruit into bite-sized pieces.

10

Arrange strawberries, halved grapes, and 1 tablespoon blueberries on the plate in a colorful cluster.

To Serve

11

Place the scrambled eggs, bacon, and fresh fruit on a child-friendly plate. Add toast or a small pancake if desired. Offer ketchup on the side if the child likes it.

12

Let the meal cool slightly and test a bite for temperature before serving to a child.
