Pan-fried (crisp exterior, quick)

1. Prepare: Remove bacon from refrigerator and let sit at room temperature for 5 minutes to take the chill off. This helps it cook evenly. 2. Heat skillet: Place a large heavy skillet (cast iron or stainless steel) on the stovetop over medium heat. No oil is necessary because bacon will render fat. 3. Arrange bacon: Lay the bacon slices in a single layer without overlapping. If needed, cook in batches. 4. Cook slowly: Let the bacon cook, undisturbed, for 3–5 minutes until the edges start to brown. Flip using tongs and continue cooking 2–4 minutes on the other side. Adjust heat as needed — lower the heat if it is browning too quickly or smoking. 5. Crisp to preference: Continue flipping occasionally until the bacon reaches your desired crispness (total 8–12 minutes depending on thickness). 6. Drain: Transfer cooked bacon to a plate lined with paper towels to drain excess fat. Sprinkle with black pepper while hot. If making glazed bacon, proceed to the glazing step below before draining. 7. Glaze (optional): If using maple-brown sugar glaze, after flipping the bacon the first time and it is nearly done (about 1–2 minutes before finished), reduce heat to low, brush each slice with maple syrup, and sprinkle evenly with brown sugar. Let the glaze bubble and caramelize for about 1 minute, watching carefully to prevent burning. Flip and glaze the other side briefly if desired, then remove and drain.

1. Preheat: Preheat the oven to 400°F (200°C). 2. Prepare pan: Line a rimmed baking sheet with foil for easier cleanup. Place a wire rack on top of the sheet (optional) to let fat drip away. If not using a rack, pour 2 tablespoons of water into the bottom of the pan to prevent smoking. 3. Arrange bacon: Lay bacon slices in a single layer on the rack or directly on the foil without overlapping. 4. Bake: Put the pan in the center of the oven. Bake for 12–18 minutes, depending on thickness and desired crispness — thin bacon about 12 minutes, regular 14–16 minutes, thick-cut 16–20 minutes. 5. Add glaze (optional): For glazed bacon, at about 2 minutes before the end of cooking, remove the pan briefly and brush each slice with maple syrup and sprinkle with brown sugar. Cook: Cook for 8–12 minutes, checking at 6–8 minutes to monitor crispness. Flip halfway through for even browning. 4. Glaze (optional): If glazing, brush with maple syrup and sprinkle brown sugar in the last 1–2 minutes of cooking; watch closely to avoid burning. 5. Drain: Remove cooked bacon and place on paper towels. Season with black pepper while hot.

Serving and storage

1. Serve: Serve bacon hot as a side for breakfast, burgers, sandwiches, salads, or as a garnish. For crumbled bacon (salads, baked potatoes), let cool slightly then chop. 2. Store: Refrigerate cooled bacon in an airtight container for up to 4 days. Reheat in a skillet over low heat, in the oven at 350°F (175°C) for 5–10 minutes, or in the microwave for short bursts. 3. Freeze: To freeze, place cooled slices in a single layer on a baking sheet and freeze until solid, then transfer to a zip-top bag for up to 2 months. Reheat directly from frozen in a skillet or oven.
