Bruschetta base
Prepare and toast bread
Preheat oven to 200°C (390°F) or heat a grill pan. Arrange 6 slices of baguette or ciabatta on a baking sheet. Brush both sides lightly with 2 tbs extra-virgin olive oil. Toast in the oven or on the grill pan until golden and crisp, about 5–7 minutes, flipping once for even color.
When the bread is hot, rub one side of each slice with the peeled garlic clove to lightly infuse garlic aroma. Set toasted slices aside to cool slightly.
Avocado cream
Make avocado cream
Halve, pit and scoop the flesh from 1 ripe avocado into a bowl. Add 1 tbs lemon juice, 2 tbs Greek yogurt or crème fraîche, 1 tsp extra-virgin olive oil, 0.5 tsp salt, 0.25 tsp black pepper and 1 tbs chopped dill. Mash and whisk until smooth but still slightly textured. Adjust seasoning or lemon to taste. Transfer avocado cream to a piping bag or small bowl for easy spreading.
Caviar & flavored oil-lemon sauce
Prepare sauce
In a small bowl combine 2 tsp extra-virgin olive oil, 1 tsp fresh lemon juice, 0.25 tsp grated lemon zest, 0.5 tsp finely chopped chives, 0.125 tsp salt and a pinch (0.05 tsp) black pepper. Whisk gently to emulsify. Taste and adjust acidity or salt. Keep the sauce chilled briefly if desired.
Topping
Assemble bruschetta
Lay toasted bread on a serving plate. Pipe or spread about 1 heaping tbs of avocado cream onto each slice (use more or less per preference). Fold or drape 2–3 thin slices of smoked salmon over each avocado-topped slice, covering the surface attractively. Sprinkle a small pinch of lemon zest and a few snipped chives over each piece.
Spoon approximately 1/3 to 1/2 tsp of caviar onto the top center of each bruschetta (total 2 tsp split across the pieces). This gives each bite a burst of salty roe.
Using a small spoon, drizzle the flavored oil-lemon sauce sparingly over each bruschetta — aim for about 1/3 tsp sauce per piece so it doesn't saturate the bread. Reserve any extra sauce for serving.
