Semolina custard (Galaktoboureko filling)

Semolina custard (Galaktoboureko filling)
Whisk dry ingredients
In a separate bowl, combine 1 cup fine semolina, 3 tablespoons granulated sugar, and 1/4 tsp salt. Whisk briefly to remove lumps.
Temper eggs
Whisk 4 large egg yolks in a small bowl. When milk is hot, ladle about 1/2 cup of the hot milk into the yolks while whisking constantly to temper.
Finish custard
Stir in 2 tablespoons unsalted butter, 1 tablespoon orange zest and 1 teaspoon vanilla extract until smooth. Taste and adjust sugar if needed. Cool slightly, then transfer to a shallow dish, cover surface with plastic wrap to prevent skin, and chill until fully cool (about 1–2 hours).
Orange cream (bright citrus cream)
Combine
In a bowl, whip 1 cup heavy cream until soft peaks form. Fold in 1/2 cup mascarpone, 2 tablespoons powdered sugar, 2 tablespoons fresh orange juice, 1 teaspoon orange zest and 1/2 teaspoon vanilla extract. Whisk gently until smooth and airy but still pipeable. Chill until serving.
Milk ice cream (no-churn)
Mix base
In a mixing bowl, combine 1 cup sweetened condensed milk, 1 cup whole milk, 1 cup heavy cream, 1 teaspoon vanilla extract and 1/8 teaspoon fine sea salt. Whisk until smooth and slightly thickened.
Churn-free freeze
Pour mixture into a loaf pan or small container, cover, and freeze. For creamier texture, after 45 minutes remove and stir vigorously to break ice crystals, then return to freezer. Repeat stirring every 30–45 minutes 2–3 times, then freeze until firm (about 4–6 hours total). Alternatively, use an ice cream maker per manufacturer's instructions.
Phyllo crisp & syrup
Preheat and prepare phyllo
Preheat oven to 350°F (175°C). Lay 6 phyllo sheets flat and brush each sheet lightly with melted butter. Sprinkle a little of the 2 tablespoons granulated sugar and 1/4 tsp cinnamon between a couple of the layers so some pieces are sweetened. Stack the sheets and roll or fold into a loose log or fold into irregular pieces for 'broken' texture.
Bake phyllo
Place prepared phyllo pieces on a baking sheet lined with parchment. Bake 8–12 minutes until deep golden and crisp. Remove and let cool — they will harden further.
Make syrup
While the phyllo bakes, combine 1/2 cup water and 1/2 cup granulated sugar in a small saucepan. Bring to a gentle simmer, stirring until sugar dissolves. Simmer 3–4 minutes, then remove from heat and stir in 1 tablespoon lemon juice and 1 teaspoon honey or a few drops orange blossom water. Cool to warm (not cold).
Soak phyllo lightly
Brush or drizzle warm syrup over baked phyllo pieces just enough to give shine and slight stickiness but keep crispness (start with 1–2 teaspoons syrup per piece). Let cool to room temperature.
Assembly — Broken 'galaktoboureko' dessert
Portion custard
Spoon chilled semolina custard into a piping bag or use a scoop. For each serving (recipe makes 6), place a generous quenelle or 3 tablespoons of semolina cream in the center of a dessert plate.
Add orange cream
Pipe or spoon about 1 tablespoon of the orange cream alongside or on top of the semolina custard for bright citrus contrast.
Add milk ice cream
Scoop 1 small scoop (about 1/3 cup) of the milk ice cream and place it next to the custard and orange cream. If the ice cream is very hard, let soften 2–3 minutes before scooping to keep appearance neat.
Crumble phyllo and finish
Break the syruped phyllo crisps into irregular shards and scatter them over and around the custard and ice cream to create the 'broken' galaktoboureko effect. Drizzle any remaining syrup lightly over the plate if desired (use sparingly to avoid sogginess).
Garnish and serve
Sprinkle 2 teaspoons chopped toasted almonds or pistachios and 1/2 teaspoon orange zest over each plate. Add a small mint leaf if using. Serve immediately so the phyllo stays crisp against the cold ice cream.
