Shrimp Preparation

Prepare Lime Bouillon

In a large pot, combine water, lime juice, salt, and lime zest. Bring the mixture to a boil over medium-high heat.

Poach Shrimp

Once boiling, add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Remove from heat and drain.

Cool Shrimp

Transfer the poached shrimp to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain and set aside.

Mezcal Cocktail Sauce Preparation

Mix Ingredients

In a medium bowl, combine ketchup, mezcal, Worcestershire sauce, hot sauce, fresh lime juice, garlic powder, and black pepper.

Whisk Together

Whisk the mixture until well combined and smooth. Adjust the seasoning to taste, adding more hot sauce if desired.

Guacamole Preparation

Mash Avocados

In a bowl, mash the ripe avocados with a fork until creamy but still chunky.

Combine Ingredients

Add lime juice, chopped red onion, diced tomato, chopped cilantro, and salt to the mashed avocados. Stir gently to combine.

Taste the guacamole and adjust seasoning as needed, adding more salt or lime juice to taste.
