Sea Foam

Prepare the Sea Foam

In a saucepan, combine water and sea salt. Heat gently until the salt dissolves. Remove from heat.

Add Soy Lecithin

Sprinkle soy lecithin over the water and let it sit for about 5 minutes.

Blend

Using an immersion blender, blend the mixture until frothy. Set aside.

Caviar

Prepare the Caviar

Chill the caviar in the refrigerator until ready to serve.

Citrus Gel

Mix Citrus Juices

In a small saucepan, combine orange juice and lemon juice.

Add Sugar and Agar-Agar

Add sugar and agar-agar powder to the juice mixture. Stir well.

Heat the Mixture

Bring the mixture to a gentle boil, stirring constantly for about 2 minutes until the agar-agar is fully dissolved.

Set the Gel

Pour the mixture into a shallow dish and let it cool at room temperature until set, approximately 30 minutes.

Cut into Squares

Once set, cut the gel into small squares for serving.

Brined Ocean Cucumber

Prepare the Brine

In a bowl, mix water, salt, and white vinegar until the salt dissolves.

Slice the Cucumber

Slice the ocean cucumber thinly and place the slices in the brine. Ensure they are fully submerged.

Brine the Cucumber

Let the cucumber brine for at least 30 minutes in the refrigerator.
