Preparation

Prepare the Whipped Potatoes

Peel and chop the potatoes into even-sized pieces. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add butter, cream, salt, and whip until smooth.

Grill the Asparagus

Trim the ends of the asparagus and toss in olive oil, salt, and pepper. Grill over medium heat for about 5-7 minutes until tender and slightly charred.

Prepare the Steak

Season the petite filet medallions with salt and black pepper. Heat a skillet over high heat with olive oil. Sear each medallion for about 3-4 minutes on each side for medium-rare.

Cook the Shrimp

In the same skillet, add minced garlic and sauté for 1 minute. Add colossal shrimp and cook for 2-3 minutes on each side until pink and opaque.

Make the Red Wine Sauce

In the skillet, add red wine and bring to a simmer, scraping up any brown bits from the pan. Reduce by half until thickened, about 5 minutes.

Finish with Truffle Oil

Drizzle truffle oil over the whipped potatoes and mix gently.
