Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

Season the Steak

Generously season both sides of the ribeye steaks with kosher salt and freshly ground black pepper. Make sure to cover the edges of the steaks as well.

Preheat the Pan

Heat a large cast-iron skillet over medium-high heat for about 5 minutes until it is very hot. Add olive oil to the pan and swirl to coat the bottom.

Sear the Steak

Carefully place the ribeye steaks in the hot skillet. Sear for about 4-5 minutes on one side without moving them to develop a nice crust.

Flip the Steak

Using tongs, flip the steaks over. Add butter, garlic cloves (smashed), and rosemary to the pan.

Baste the Steak

Tilt the pan slightly and use a spoon to baste the melted butter over the ribeye steaks. Cook for an additional 4-5 minutes for medium-rare, or longer if you prefer your steak cooked more.

Check Doneness

Use an instant-read thermometer to check the internal temperature; it should read about 130°F (54°C) for medium-rare.

Rest the Steak

Remove the steaks from the skillet and transfer them to a cutting board. Let them rest for at least 5-10 minutes to allow the juices to redistribute.
