Prepare the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter until mixed well. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden. Allow to cool.

Make the cheesecake filling

In a large mixing bowl, beat together the cream cheese and goat cheese until smooth. Add the granulated sugar and mix until creamy. Add the brown buttermilk, eggs, and vanilla extract, mixing until fully incorporated.

Bake the cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.

Prepare the apples

While the cheesecake is cooling, thinly slice the green apples and toss them with cinnamon and sugar in a bowl.

Once the cheesecake has cooled completely, top with the cinnamon-sugar apples before serving. Slice and enjoy!
