Preparing the French Fries

Cutting the Potatoes

Wash and peel the russet potatoes. Cut them into even sticks, about 1/4-inch thick.

Soaking

Soak the potato sticks in cold water for at least 30 minutes to remove excess starch.

Drying

Drain and pat the potato sticks dry with paper towels.

Frying

In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes.

Salting

Remove fries from the oil and drain on paper towels. Sprinkle with salt immediately.

Making the Chili Ketchup

Mixing Ingredients

In a bowl, combine ketchup, chili powder, honey, and lime juice. Mix well until smooth.

Making the Blue Cheese Aioli

Combining Ingredients

In a bowl, combine mayonnaise, crumbled blue cheese, minced garlic, lemon juice, salt, and pepper. Mix until well blended.
