Form patties

Divide the 1 lb ground grain-fed beef into four equal portions (about 4 oz each). Gently form each portion into a 3 to 3.5-inch wide patty about 1/2 inch thick, pressing a shallow dimple in the center of each patty with your thumb to reduce doming during cooking. Do not overwork the meat.

Season

Season both sides of each patty with the fine sea salt (about 1 tsp total distributed) and freshly ground black pepper (about 1/2 tsp total).

Cook patties

Heat a cast-iron skillet or heavy sauté pan over medium-high heat until hot. Add 1 tbs vegetable oil and swirl to coat. Working in a single layer (cook two at a time if needed), place patties in the skillet. Cook undisturbed 3 minutes on the first side until a brown crust forms. Flip and cook 2 to 3 minutes more for medium (adjust 1–2 minutes for rarer/weller). If adding cheese, place a slice on each patty in the final 30–45 seconds and cover the pan briefly to melt.

Rest

Transfer cooked patties to a plate and let rest 3 minutes while you prepare buns and sauce. Resting allows juices to redistribute.

Special Sauce

Combine 1/2 cup mayonnaise, 2 tbs ketchup, 1 tbs sweet pickle relish, 1 tsp yellow mustard, 1/2 tsp vinegar, 1 tbs finely minced onion, 1/2 tsp minced garlic, 1/4 tsp paprika, 1/8 tsp salt, and 1/8 tsp black pepper in a small bowl. Whisk until smooth and uniform. Taste and adjust: add a touch more relish for sweetness or a few drops more vinegar for brightness. Chill at least 10 minutes to let flavors meld (can be made ahead and refrigerated up to 3 days).

Buns & Finish

Butter and toast buns: spread the softened 1 tbs butter evenly on the cut sides of the 4 sesame buns. Return the same skillet (wipe if there is excess grease) to medium heat and place buns cut-side down. Toast 1 to 2 minutes until golden and slightly crisp. Remove and keep warm.

Assemble Lil' Brgs: spread about 1 tbs of special sauce onto the bottom half of each toasted bun. Place a lettuce leaf on the sauce, then the rested beef patty (with melted cheese, if used). Top the patty with 2 pickle slices and a tomato slice if using. Spread a thin layer of sauce on the top bun and close the burger.

Serve: arrange assembled Lil' Brgs on a platter and serve immediately while warm. Offer extra sauce and pickles on the side.
