Form patties

Place ground beef in a bowl. Add kosher salt, black pepper and Worcestershire sauce. Mix gently with your hands until just combined; do not overwork. Divide into 4 equal portions (about 4 ounces each). Lightly shape each portion into a compact round patty about 3 inches wide and 1/2 inch thick, pressing a shallow dimple in the center of each patty with your thumb to prevent puffing.

Preheat and cook

Heat a skillet or griddle over medium-high heat. Add 1 teaspoon vegetable oil and spread. When oil is shimmering and the pan is hot (about 2–3 minutes), place the patties in the pan leaving space between them. Cook undisturbed 2–3 minutes until a brown crust forms on the bottom. Flip and cook another 1.5–2 minutes for medium doneness. Adjust time for desired doneness.

Add cheese

About 30–45 seconds before removing from the pan, place one slice of American cheese over each patty and cover the pan with a lid or tent with foil to melt cheese, 30–45 seconds.

Toast buns and assemble

While patties finish, split slider buns and spread a thin layer of softened butter on cut sides. Place cut sides down on a separate skillet over medium heat for 30–60 seconds until lightly golden. On each bottom bun place a small handful (about 1–2 tablespoons) of shredded iceberg lettuce, put the cheeseburger patty on top, add 1–2 pickle slices and a few thin rings of red onion. Spread ketchup (about 1/2 tablespoon) on the top bun and mustard (about 1/4 teaspoon) on the bottom or top as preferred. Cover with top bun and repeat for all 4 sliders.

Prepare vegetables: Thinly slice the red onion into rings and separate. Wash and shred or chop iceberg lettuce into small pieces. Have pickle slices ready. Portion ketchup and mustard into small bowls or apply directly to buns during assembly as described above.

Fries

Prepare potatoes

Wash and peel potatoes if desired. Cut each potato into 1/4–1/2 inch thick sticks for classic fries. Rinse cut fries under cold water until water runs clear to remove excess starch, then pat thoroughly dry with kitchen towels.

Fry (deep or shallow)

Heat canola oil in a heavy-bottomed skillet to 325°F (if you have a thermometer) for the first cook. Fry potatoes in batches for 3–4 minutes until soft but not browned. Remove and drain on paper towels. Increase oil temperature to 375°F and return fries in batches for 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with kosher salt and paprika (optional).

Air-fryer option

Toss dried cut fries with 1 tablespoon canola oil. Preheat air fryer to 380°F (if available). Cook in a single layer for 12–16 minutes, shaking the basket every 4 minutes, until golden and crisp. Season with kosher salt and paprika immediately after cooking.

Portion fries alongside the sliders. Provide extra ketchup for dipping.
