Method
A5 Wagyu Taco - Protein & Seasoning
Portion & Bring to Temperature
Remove A5 Wagyu from the refrigerator 20–30 minutes before cooking so it comes closer to room temperature. Keep it lightly wrapped; this reduces thermal shock and helps achieve an even sear.
Slice or mince
Pat the beef dry with paper towel. For tacos, slice the beef into very thin 1/8–1/4-inch slices against the grain if you want quick sear pieces, or coarsely chop/mince into small bite-sized pieces (~1/4 inch) if you prefer a crumbled taco topping. Use only enough handling to keep the marbling intact.
Season lightly
Sprinkle the sliced or minced Wagyu with 1/2 tsp fine sea salt and 1/4 tsp freshly ground black pepper. Because A5 Wagyu is extremely rich, keep seasonings minimal to let the beef flavor shine.
Sear
Heat a cast-iron skillet or heavy stainless pan over high heat until smoking point is close. Add 1 tsp neutral oil and swirl. Add the Wagyu in an even single layer (work in two batches if necessary). Sear quickly: 20–40 seconds per side for thin slices, or stir and sear 45–60 seconds until edges brown but interior remains pink for small chopped pieces. Do not overcook; A5 is best rare to medium-rare. Use tongs or a spatula to turn quickly.
Rest
Remove beef from pan and transfer to a warm plate. Rest 2–3 minutes; residual heat will finish cooking slightly. Spoon any rendered fat from the pan into a small bowl to use sparingly for flavor if desired.
Tortillas & Assembly
Warm tortillas: Heat a dry skillet over medium-high. Brush each side of the tortillas very lightly with softened butter (about 1 tbs divided among 6 tortillas) and warm 20–30 seconds per side until pliable and lightly toasted. Keep wrapped in a clean towel to stay warm.
Assemble tacos: Place warm tortilla on a plate. Spoon 1–2 tablespoons of the seared Wagyu onto each tortilla (adjust depending on size and desired richness).
Crunch & Pickle
Quick pickled red onion (if not prepped)
If you don’t have ready quick-pickled red onion, thinly slice 1/2 small red onion and combine with 1/4 cup rice vinegar, 1 tsp sugar, and a pinch of salt. Let sit 10–15 minutes. Drain before using. Use about 1–2 tablespoons per taco.
Add crunch: Top Wagyu with a small amount (about 1 tablespoon) of julienned Japanese cucumber and 1–2 teaspoons of quick pickled red onion per taco. Sprinkle each taco with a pinch (approx 1/4 tsp) of toasted sesame seeds.
Sauces & Finishes
Make wasabi crema
In a small bowl, whisk together 1/4 cup Japanese mayonnaise, 1/2 tsp prepared wasabi paste, 1 tsp fresh lime juice, 1/2 tsp honey, and 1 tsp water to loosen. Taste and adjust wasabi or lime; finish with 1/8 tsp salt. The crema should be smooth and slightly tangy. Transfer to a squeeze bottle or small spoon.
Make soy-sesame glaze
Whisk 1 tbsp low-sodium soy sauce, 1 tsp mirin, 1/2 tsp toasted sesame oil and 1/2 tsp honey together until slightly syrupy. Warm gently for 20–30 seconds in microwave or in a small saucepan to help emulsify if desired. Set aside.
Finish tacos: Drizzle a small amount (about 1/2 tsp) of soy-sesame glaze over the Wagyu on each taco. Add a thin ribbon or small dollop (about 1/2 tsp) of wasabi crema on top. Garnish with a few microgreens or mitsuba sprigs and a squeeze of lime. Serve immediately.
Plating & Serving
Serve immediately while tortillas are warm and beef is just rested. Offer lime wedges on the side. Because A5 Wagyu is very rich, recommend one taco per person as an appetizer or 2–3 per person if part of a larger meal. Enjoy.
