Prep ramekins and oven

Preheat oven to 450°F (230°C). Generously butter four 6-ounce ramekins using the reserved butter, then dust each with cocoa powder, tapping out excess. Set ramekins on a baking sheet.

Melt chocolate and butter

In a heatproof bowl set over a barely simmering pot of water (double boiler) or in short bursts in the microwave, melt the chopped bittersweet chocolate with 1/2 cup (0.5 cups) butter. Stir until smooth and glossy. Remove from heat and let cool 2 minutes.

Mix eggs and sugar

In a separate medium bowl, whisk together the 2 whole eggs, 2 yolks and 1/2 cup granulated sugar until pale and slightly thickened (about 1–2 minutes by hand, or 30 seconds with an electric mixer).

Combine batter

Fold the egg-sugar mixture into the melted chocolate until combined. Add 1/4 cup flour, 1/2 teaspoon vanilla extract, and 1/8 teaspoon salt. Fold gently until no streaks remain. Do not overmix.

Fill ramekins and chill briefly

Divide batter evenly among the prepared ramekins (about 1/2 cup batter each). Optional: cover and refrigerate for 15–30 minutes for cleaner edges and slightly firmer center (helps timing consistency).

Bake

Place the baking sheet with ramekins in the preheated oven and bake 10–12 minutes. The edges should be firm and set while the center remains soft and slightly jiggly. Exact time depends on oven and ramekin size; 10 minutes for very gooey center, up to 12 for slightly more set.

Invert and rest

Remove from oven and let cakes rest 1 minute. Run a thin knife around the edges to loosen, then invert each ramekin onto a dessert plate. Gently lift ramekin away. If cake sticks, wait an extra 30 seconds and try again.

Raspberry - Chocolate Sauce

Cook raspberries

While cakes bake, combine 1 cup raspberries, 1 teaspoon granulated sugar, 2 tablespoons powdered sugar, and 2 tablespoons water in a small saucepan over medium heat. Stir and cook 3–5 minutes until raspberries break down and sauce thickens slightly.

Finish sauce

Remove from heat and press the mixture through a fine-mesh sieve into a bowl to remove seeds, using a spatula to extract as much puree as possible. Return about 3 tablespoons of the seedless puree to the saucepan, add 1 ounce finely chopped dark chocolate and 1/2 teaspoon lemon juice. Warm gently, stirring, until chocolate melts and the sauce is glossy. Taste and adjust sweetness with a little more powdered sugar or lemon if needed. Keep warm.

To Serve

Plate each inverted lava cake, drizzle ~2 tablespoons of the warm raspberry-chocolate sauce around and slightly over the cake. Place one scoop of vanilla ice cream beside or on top of each warm cake so that it melts slightly into the lava center.

Garnish each plate with 2 fresh raspberries and a mint leaf if desired. Serve immediately while cake centers are molten.
