Preparation
Prepare the Steaks
Remove the steaks from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking. This ensures even cooking.
Season the Steaks
Pat the steaks dry with paper towels. Generously season both sides of each steak with sea salt and freshly ground black pepper.
Cooking
Cook to Desired Doneness
For the Australian Flat Iron, cook for about 4-5 minutes per side for medium-rare. For the Japanese A5 Strip, cook for about 3-4 minutes per side for medium-rare. For the Japanese A5 Filet, cook for about 3-4 minutes per side. Adjust cooking time for desired doneness.
Rest the Steaks
Remove the steaks from the pan and let them rest for about 5-10 minutes before slicing. This allows the juices to redistribute.
Serving
Plate the Steaks
Slice the steaks against the grain and arrange them on a serving platter. Optionally, drizzle with additional olive oil and sprinkle with sea salt before serving.
