Wipe the mushrooms with a damp cloth to remove dirt. Trim the stems if necessary.
Peel and crush the garlic cloves.
In a large oven-safe dish, combine the cleaned mushrooms, olive oil, crushed garlic, thyme, salt, and black pepper.
Preheat your oven to 150°C (300°F). Cover the dish with foil and bake for about 1 hour, or until the mushrooms are tender.
In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.
Once cooled, crumble the bacon and mix it with the grated cheese.
Remove the mushrooms from the oven and sprinkle the bacon and cheese mixture evenly over the top.
Switch the oven to broil and return the dish to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
