Prepare the Catfish

In a shallow dish, combine cornmeal, flour, salt, black pepper, and cayenne pepper. Dip each catfish fillet in buttermilk, then dredge in the cornmeal mixture. Ensure even coating.

Heat the Oil

In a large frying pan or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish

Carefully add the coated catfish fillets to the hot oil, cooking for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Cook the French Fries

In the same oil, fry the French fries according to package instructions until crispy. Drain on paper towels.

Assemble the Po Boy

Slice the French bread or hoagie rolls lengthwise. Place shredded romaine lettuce on the bottom, add fried catfish, top with pickle come back remoulade, and finish with more lettuce. Serve with French fries on the side.
