Caramelize the Onions

In a large pot, melt the butter with olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized (about 30-40 minutes).

Add Garlic and Deglaze

Add the minced garlic and cook for another minute. Pour in the white wine and scrape the bottom of the pot to deglaze, letting it simmer for 5 minutes.

Add Broth and Season

Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes. Remove bay leaves before serving.

Prepare the Baguette

While the soup is simmering, preheat your oven to 375°F (190°C). Spread garlic butter on each slice of baguette and place them on a baking sheet. Toast in the oven for about 10 minutes or until golden brown.

Serve

Ladle the soup into bowls, top with a mixture of Swiss and Gruyère cheese, and place under the broiler until the cheese is melted and bubbly. Serve with the toasted baguette on the side.
