Preparation

Prepare the Potatoes

Peel and cut the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Make Whipped Potatoes

Add butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy. Set aside.

Prepare the Shrimp

Peel and devein the shrimp. Chop garlic and set aside.

Prepare the Broccolini

Rinse broccolini and trim the ends.

Cooking

Cook the Redfish

Rub the redfish fillets with cajun seasoning. Heat olive oil in a skillet over medium-high heat. Cook the fillets for 4-5 minutes on each side until blackened and cooked through. Squeeze lemon juice over the top.

Cook the Shrimp

In the same skillet, melt butter and add garlic. Sauté for 1 minute, then add shrimp. Cook until shrimp are pink, about 3-4 minutes. Pour in white wine, lemon juice, and parsley. Simmer for 2 minutes.

Grill the Broccolini

In a grill pan, heat olive oil over medium heat. Add broccolini, season with salt and pepper, and grill for about 5-7 minutes until tender and slightly charred.

Plate the Dish

Serve the blackened redfish alongside whipped potatoes, topped with shrimp scampi, and grilled broccolini on the side.
