1. Chill and measure
Ensure the bottle of Pinot Grigio is well chilled (45–50°F / 7–10°C). Measure 1.5 cups (approx. 12 fl oz / 360 ml) of Pinot Grigio into a measuring cup or directly into the mixing glass.

2. Juice and sweeten
In a cocktail shaker or large glass, add 0.5 oz fresh lemon juice, 0.25 oz fresh lime juice and 0.25 oz simple syrup (or honey syrup). Stir or briefly shake with no ice just to combine and slightly aerate.
3. Combine with wine
Pour the measured Pinot Grigio into the citrus mixture and gently stir 6–8 times to combine. If using peach or elderflower liqueur, add 0.5 oz now and stir to integrate.
4. Adjust sweetness and acidity
Taste and adjust: add another 0.25 oz simple syrup if you prefer sweeter, or a few drops more lemon/lime if you want brighter acidity.
5. Optional sparkle
If you prefer a spritz-style drink, top with 1 oz chilled club soda or sparkling water and gently stir once to incorporate.

6. Fill a wine glass or large rocks glass with 1 cup of ice cubes. Pour the combined Pinot Grigio mixture over the ice.
Garnish & Serve
7. Garnish the drink with a fresh lemon wheel on the rim and a mint sprig tucked in or slapped and placed on top for aroma. Serve immediately.
