Place the 1 cup of mini cocoa puff cereal in a zip-top bag and lightly crush with a rolling pin or pulse a few times in a food processor so some pieces remain whole for texture. Reserve extra 1/4 cup for topping.

In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, cocoa powder, and salt until evenly combined.

Fold the lightly crushed 1 cup of mini cocoa puff cereal into the dry mixture so the cereal gets a light dusting of flour to help prevent sinking in the batter.
Combine Wet Ingredients

In a medium bowl, whisk the mashed bananas until smooth. Add the egg, buttermilk, melted butter, and vanilla extract and whisk until fully combined and slightly frothy.
Mixing and Assembling Batter

Make a well in the center of the dry ingredients. Pour the wet mixture into the well. Using a rubber spatula, gently fold the wet and dry ingredients together until just combined — a few streaks of flour are okay. Do not overmix; overmixing will make the bread tough.

If the batter seems very thick, add up to 1-2 tablespoons of buttermilk to reach a slightly thick yet pourable consistency. Stir only until incorporated.

Transfer the batter to the prepared loaf pan and smooth the top with a spatula so it's evenly distributed.

Bake in the preheated oven for 45–55 minutes, or until the top is set and a toothpick inserted into the center comes out with a few moist crumbs (avoid wet batter). If using muffins, bake 16–22 minutes. If the top browns too quickly, tent loosely with foil after 30 minutes.

Optional: Warm slightly before serving (microwave a slice for 8–10 seconds) and serve alone or with a small smear of butter or a drizzle of chocolate-hazelnut spread.
