Prepare and season salsa
Place the diced tomatoes, red onion, minced jalapeño, chopped cilantro and minced garlic in a medium mixing bowl.

Add lime juice, 1 tsp salt and 1/4 tsp black pepper. Stir gently to combine. Taste and adjust seasoning — add more salt or lime if needed.

Cover and refrigerate the salsa for at least 15 minutes to let flavors marry while you prepare the cheese mixture (salsas develop more flavor if made 30–60 minutes ahead).

Soften and mix cheeses
In a medium bowl, beat the softened cream cheese with a rubber spatula or electric mixer until smooth.

Stir in the sour cream until fully combined and smooth.

Fold in the shredded cheddar, ground cumin, smoked paprika, 1/2 tsp salt and 1/4 tsp black pepper. Mix until evenly distributed; reserve about 1/4 cup of shredded cheddar for the top if you prefer extra sprinkling.

If the mixture is very stiff, let it sit at room temperature 10 minutes or briefly microwave (10–15 seconds) to soften for easier spreading.

Transfer the cheese mixture into a shallow serving bowl or pie plate and smooth the top with a spatula.
Assemble and finish

Spoon the prepared chilled salsa over the smoothed cheese mixture in an even layer, leaving a small border of cheese visible around the edge if desired.

Sprinkle the reserved additional shredded cheddar over the top, then scatter the chopped cilantro evenly across the salsa for a bright finish.

If you like, briefly broil in the oven (optional) — place under a hot broiler 2–3 inches from heat for 1–2 minutes until cheese on the edge just melts and browns slightly. Watch carefully to prevent burning. Serve at room temperature if not broiling.

Garnish with lime wedges and serve immediately with tortilla chips or crackers for scooping.
