Prepare glass (optional)
If you want a salted rim, rub the grapefruit or lime wheel around the rim of a rocks glass or coupe, then dip the rim into a small plate of coarse or smoked sea salt. Set the glass aside and chill briefly in the freezer (about 5 minutes) while you build the cocktail.

Shake base
Add 2 oz blanco tequila, 0.75 oz fresh lime juice, 0.75 oz fresh orange juice, 0.5 oz agave syrup, 0.25 oz honey or elderflower liqueur (if using), 2 dashes Angostura bitters, and ice into a cocktail shaker. Cap and shake vigorously for 12–15 seconds until the shaker is cold to the touch and a good frost has formed.

Strain
Double-strain the shaken mixture into the prepared chilled glass over fresh ice (if using a rocks glass) or neat into a coupe. Use a fine mesh strainer in addition to the shaker strainer to remove ice shards and pulp for a clean finish.
To finish & serve

Top the strained cocktail with 2 oz chilled grapefruit soda or sparkling water to add effervescence and a bright citrus lift. Gently stir once with a bar spoon to integrate the soda without flattening it.

Garnish with a grapefruit wheel or thin lime wheel on the rim or floated on top. Serve immediately.
