Heat oil and pop
Place a large heavy-bottomed pot with a tight-fitting lid over medium-high heat. Add the 2 tbsp neutral oil and 3 popcorn kernels. Cover and heat until those test kernels pop, about 1–2 minutes.

Add kernels
Once test kernels pop, add the remaining 1 cup popcorn kernels in an even layer. Cover, remove from heat for 15 seconds to let the kernels come to near-temperature, then return to the heat. Gently shake the pot back and forth over the burner as the kernels pop to keep them from burning.

Finish popping
When popping slows to 2–3 seconds between pops, remove the pot from the heat and immediately transfer popcorn to a large mixing bowl to avoid steam making it soggy.

Season with butter and everything seasoning
Melt 3 tbsp unsalted butter in a small saucepan or microwave and reserve. While popcorn is still hot, evenly drizzle 2 tbsp of the melted butter over it and toss gently to coat. Immediately sprinkle 2 tbsp everything bagel seasoning and 1 tsp fine sea salt; toss again to distribute. Reserve about 1 tbsp melted butter for finishing drizzle if desired.

Mix remoulade
In a small bowl combine 0.25 cup mayonnaise, 1 tsp Dijon mustard, 1 tbsp minced capers, 1 tsp lemon juice, 0.5 tsp paprika, 0.25 tsp hot sauce (if using), 0.25 tsp salt and 0.125 tsp black pepper. Whisk until smooth and taste — adjust salt, lemon, or hot sauce to preference.

Warm a bit for drizzle (optional)
If you prefer the remoulade slightly warm for easier drizzling, microwave the combined sauce for 8–10 seconds or whisk in 1 tbsp of the reserved melted butter to loosen. Do not overheat — it should be warm, not hot.

Prepare lettuce bed
Spread the 1 cup shredded lettuce in a shallow serving bowl or platter to create a bed for the popcorn. This provides a fresh contrast and catches any stray seasoning.

Assemble popcorn on lettuce
Pile the seasoned everything popcorn on top of the shredded lettuce in the serving vessel so the lettuce sits underneath and around the popcorn.

Drizzle remoulade and butter
Using a spoon or a small squeeze bottle, lightly drizzle the remoulade evenly over the popcorn. Next, warm the reserved 1 tbsp melted butter and drizzle sparingly over the top to add gloss and richness.
