Mix & Chill

    Combine spirit, citrus, syrup and tea

    Fill a cocktail shaker or mixing tin with a couple of ice cubes. Add the aged rum (2 oz), fresh lemon juice (3 tsp), simple syrup (1 tsp) and cold strong black tea (2 oz).

    Shake to chill and dilute

    Secure the shaker and shake vigorously for 10–12 seconds until the shaker is well chilled and slightly frosted. This both chills and dilutes the mixture to balance flavors.

Assemble & Serve

    Prepare glass

    Place 3–4 large ice cubes into a highball or Collins glass.

    Strain and top with cider

    Double-strain the shaken mixture into the prepared glass over the ice to remove tiny ice shards. Immediately top with hard apple cider (3 oz) poured gently to preserve carbonation.

    Finish & garnish

    If using, add 2 dashes of Angostura bitters over the top. Garnish with a lemon wheel on the rim and a sprig of fresh thyme tucked into the glass. Serve with a straw or swizzle stick.
