House Burger Sauce

    Make sauce

    Whisk together mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, smoked paprika, onion powder, garlic powder, salt, and black pepper in a small bowl until smooth. Taste and adjust seasoning. Refrigerate at least 15 minutes to let flavors meld (can be made up to 24 hours ahead).

Slider Patties

    Form patties

    Divide the ground beef into 12 equal portions (about 1.5 ounces each). Lightly form into thin round patties slightly larger than the buns because they will shrink while cooking. Press a shallow dimple in the center of each patty with your thumb to help them cook evenly.

    Season

    Season both sides of each patty with kosher salt, freshly ground black pepper, and a light sprinkle of Worcestershire sauce (or mix Worcestershire into the meat before forming if preferred).

    Cook patties

    Heat a large cast-iron skillet or griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and spread. Working in batches if necessary, cook patties 2 to 2½ minutes per side for medium (adjust time for desired doneness). Do not press down on patties while cooking. During the last 30–45 seconds of cooking, place a slice of cheddar onto each patty and cover the pan with a lid or tent with foil to melt cheese.

    Rest

    Transfer cooked patties to a plate and let rest for 2 minutes while preparing buns and assembly.

Brioche Buns & Assembly

    Prepare buns

    Preheat oven to 350°F (175°C). Halve the brioche slider buns. Brush cut sides lightly with softened butter. Arrange buns cut-side up on a baking sheet and toast in oven for 5–7 minutes until warm and lightly golden.

    Assemble sliders

    Spread about 1 tablespoon of house burger sauce on the bottom half of each bun. Place a lettuce leaf on the sauce, then a cheeseburger patty topped with a pickle slice and a few rings of thinly sliced red onion. Add another small dollop (about 1 teaspoon) of sauce on the top bun interior if desired, then close the slider.

    Serve

    Arrange sliders on a platter and serve immediately. Makes 12 sliders. Leftover sauce will keep refrigerated for up to 5 days.
