Prepare accompaniments

Open sparkling wine

Place the poured glass on the table. For shared bottles, present the bottle label to guests before pouring additional glasses. Offer a wine stopper if the bottle will be stored for later.

Serve

Recork or use a vacuum wine stopper and refrigerate any opened still wine; reds can be refrigerated briefly and brought back to serving temperature before serving. Sparkling wines lose effervescence quickly; use a sparkling-specific stopper and keep chilled; consume within 1–3 days for best quality.
