Sauce (Buffalo-style mayo)

    Make the sauce

    In a small bowl combine mayonnaise, Frank's RedHot, lemon juice, garlic powder, and black pepper. Whisk until smooth and taste; adjust hot sauce to desired heat. Refrigerate while you cook the burgers.

    Form patties

    Divide the ground beef into two equal portions (about 8 oz each). Gently shape each portion into a patty about 3/4 inch thick and slightly wider than the bun. Do not overwork the meat. Make a shallow indentation in the center of each patty with your thumb to prevent doming during cooking.

    Season

    Lightly brush both sides of the patties with the vegetable oil (this helps with searing) and season both sides evenly with kosher salt and freshly ground black pepper. If using, sprinkle the Worcestershire sauce into the meat and gently press it in before shaping.

    Cook the patties

    Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 3–4 minutes). Add a small drizzle of oil to the pan and swirl. Place the patties in the pan, leaving space between them. Cook without moving for 3–4 minutes until a good brown crust forms. Flip and cook an additional 2–3 minutes for medium (internal temperature ~160°F/71°C) or longer to your preferred doneness.

    Melt the cheese

    About 1 minute before the patties are done, place an American cheese slice on each patty. Cover the pan with a lid (or loosely tent with foil) for 30–60 seconds to fully melt the cheese.

    Rest patties

    Transfer the patties to a plate and let rest for 2 minutes while you toast the buns and assemble.

    Toast buns

    Spread softened butter on the cut sides of the buns. Return the skillet to medium heat (wipe out excess fat first if necessary). Place buns cut-side down in the skillet and toast 1–2 minutes until golden and crisp. Remove from heat.

    Assemble burger

    On the bottom bun spread about 1 tablespoon of the buffalo-style mayo. Place a lettuce leaf, then the cheeseburger patty, followed by 1–2 tomato slices, red onion slices (if using), and pickle slices (if using). Add another small dollop of sauce on the top bun if desired. Cap with the top bun.

    Serve immediately with fries, chips, or your choice of side.
