Prepare the glass (optional)
If you prefer a salted rim, rub a lime wedge around the edge of a Collins or highball glass and dip the rim into citrus salt or coarse salt to lightly coat. Set the glass aside.

Build and shake
In a cocktail shaker add Jose Tradicional tequila (2 oz), elderflower liqueur (0.75 oz), fresh lime juice (0.75 oz), fresh grapefruit juice (1 oz), fresh lemon juice (0.25 oz), agave syrup (0.5 oz), and 2 dashes Angostura bitters. Fill the shaker with ice (about 4–6 large cubes) and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Strain
Fill the prepared Collins/highball glass with fresh ice. Double-strain the shaken mixture into the glass over the ice to remove small ice shards and pulp, preserving a clean texture.

Top and finish
Top the cocktail with about 2 oz (or to taste) of chilled soda water to create a light effervescence. Give the drink one gentle stir (1–2 rotations) to marry the soda without flattening the bubbles.

Garnish and serve
Garnish with a grapefruit wheel or a lime wedge on the rim. Serve immediately with a straw if desired.
