Main

Method

Prepare Avocado

  1. 1

    Select and slice

Choose a ripe avocado that yields slightly to gentle pressure. Using a sharp knife, slice lengthwise around the pit until you hit it, rotate the avocado to complete the cut, and twist the two halves to separate.

  2. 2

    Remove pit

Carefully remove the pit by either scooping it out with a spoon or tapping the pit with the knife blade and lifting it out. Discard pit.

  3. 3

    Scoop or slice flesh

Scoop the avocado flesh into a small bowl with a spoon if making mashed/spread form, or run the knife lengthwise through the flesh inside each half and scoop out slices if you want sliced presentation.

Season and Finish

  1. 4

    Acid and oil

Immediately squeeze the juice of half a lime (or lemon) over the avocado flesh to prevent browning and add brightness. Drizzle about 1 teaspoon extra-virgin olive oil over the avocado.

  2. 5

    Salt and pepper

Sprinkle approximately 1 teaspoon sea salt and 1/4 teaspoon freshly ground black pepper over the avocado. If mashed, gently fold the seasonings in with a fork until combined but still slightly chunky; if sliced, gently toss or arrange and then season.

  3. 6

    Optional mix-ins

If using optional ingredients, fold in 1 tablespoon chopped cilantro and 1 tablespoon finely diced red onion for fresh flavor. For a spicy kick, add 1/4 teaspoon crushed red pepper flakes. Fold in 1/4 cup halved cherry tomatoes if using, or sprinkle 2 tablespoons crumbled feta or cotija on top.

  4. 7

    Taste and adjust

Taste the avocado and adjust seasoning: add more salt, a squeeze more citrus, or a pinch more pepper as desired.

  5. 8

    Serve

Serve immediately as a topping, spread, side, or garnish. Avocado is best served fresh; if you must store, press plastic wrap directly on the surface to limit air exposure and refrigerate for up to 24 hours.
