Preparation
Chill
Place the Champagne or other sparkling wine and chosen juice (orange, pineapple, or cranberry) in the refrigerator until well chilled (at least 1 hour).
If using fresh juice, strain any pulp through a fine mesh strainer for a cleaner-looking cocktail (optional).
Assemble
Glassware
Select chilled Champagne flutes (one per serving). If you prefer a larger drink, use a tulip or white wine glass.
Pour
Pour sparkling wine into each flute until it is about half full (approximately 1/2 cup or 120 ml).
Top with juice
Slowly add an equal part of your chosen chilled juice (about 1/2 cup or 120 ml) to each flute. Pour gently down the side of the glass to preserve bubbles.
Adjust
Taste and adjust the ratio if desired (classic is 1:1 sparkling wine to juice; some prefer 2:1 for drier).
Garnish
Garnish each glass with a thin orange slice on the rim for orange mimosas, a pineapple wedge for pineapple mimosas, or a few fresh cranberries for cranberry mimosas. Add a mint sprig if desired.
Serve
Serve immediately while the drink is bubbly. Do not let sit for long — sparkling wine will lose its effervescence.
If preparing a pitcher for a crowd, combine chilled sparkling wine and juice in the desired ratio just before serving to preserve bubbles; pour into chilled flutes.
