Fit Turkey Wrap

Begin by harvesting ripe Chardonnay grapes from the vineyard. Aim for a sugar content of approximately 22-24 Brix. Ensure that the grapes are healthy and free from rot.

Harvesting Grapes

Once harvested, crush the grapes to release the juice. Use a grape press to separate the juice from the skin and seeds. Collect the pressed juice in a sanitized fermentation vessel.

Crushing and Pressing

Add potassium metabisulfite (sulfites) to the juice to prevent oxidation and spoilage. Use 1 gram per liter of juice, ensuring even distribution.

Adding Sulfites

Pitch the wine yeast into the juice. Stir gently and cover the fermentation vessel with an airlock. Allow the fermentation to take place at a temperature of 18-22°C (64-72°F) for 2-3 weeks, or until fermentation is complete.

Fermentation

After primary fermentation, add malolactic bacteria to the wine. This will convert sharp malic acid into softer lactic acid, enhancing the wine's mouthfeel. Allow this secondary fermentation to take place for another 2-4 weeks.

Malolactic Fermentation

Once malolactic fermentation is complete, add medium toast oak chips to the wine to impart flavor and complexity. Allow the wine to age for at least 6 months in a cool, dark place.

Aging

After aging, carefully siphon the wine into sanitized bottles, leaving about an inch of headspace. Cork the bottles and store them upright for a few days to allow the corks to expand.

Bottling

Once the wine has settled, chill the bottles in the fridge before serving. Enjoy your Donnachadh Vineyard Chardonnay with seafood dishes or light salads.
