Prepare the Potatoes
Wash and scrub the russet potatoes. Cut each potato into wedges (about 10 wedges per potato).

Set Up Breading Station
In a shallow bowl, combine all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper. In another bowl, pour the plant-based milk. In a third bowl, place the breadcrumbs.

Bread the Potato Wedges
Dip each potato wedge first into the flour mixture, then into the plant-based milk, and finally coat with breadcrumbs. Place the breaded wedges on a baking sheet lined with parchment paper.

Bake the Wedges
Preheat the oven to 425°F (220°C). Bake the potato wedges for 25-30 minutes, turning halfway through, until golden brown and crispy.

Prepare the Sauce
Once the wedges are cooked, toss them in your choice of sauce until evenly coated.

Serve the potato wings with celery sticks and a side of vegan ranch dressing.
