Prepare the Vegetables
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced bell peppers and onions, season with salt and pepper, and sauté until softened, about 5-7 minutes.

Cook the Burger Patties
While the vegetables are cooking, season the Impossible Burger® patties with blackening seasoning on both sides. In a separate pan, heat 1 tablespoon of olive oil over medium-high heat and cook the patties for 3-4 minutes on each side or until a blackened crust forms.

Assemble the Burger
On the bottom half of each pretzel bun, layer fresh spinach, the blackened burger patty, grilled pineapple, sautéed peppers, and onions. Drizzle with BBQ sauce and top with the other half of the bun.
