Prepare the Cookie Dough
In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.

Bake the Cookies
Preheat your oven to 350°F (175°C). Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each cookie. Bake for 10-12 minutes, or until the edges are golden brown. Allow cookies to cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Once the cookies are completely cool, take one cookie and place a large scoop of Hudson Creamery ice cream on the flat side. Top with another cookie, flat side down. Gently press together to form a sandwich.
