Prep potatoes

Wash and peel (optional) the russet potatoes. Cut into 1/3-inch to 1/2-inch thick matchstick fries or wedges for a big-basket style. Place cut potatoes in a large bowl of cold water and soak for 20–30 minutes to remove excess starch. Drain and rinse, then spread on a clean kitchen towel or paper towels and pat very dry.

Season and coat

Put the dried potato pieces in a large mixing bowl. Sprinkle with cornstarch and toss to coat evenly (this helps crisping). Add kosher salt and black pepper and toss to distribute. If oven-roasting, toss with 2–3 tablespoons of the oil until evenly coated; if frying, do not pre-add large amounts of oil to the potatoes.

Cook the fries (two methods)

Deep-fry method: Heat vegetable oil in a heavy pot or fryer to 325°F (160°C). Fry the potatoes in batches for 3–4 minutes until lightly cooked but not browned; remove and drain on paper towels. Increase oil to 375°F (190°C) and fry batches again 2–3 minutes until golden and crisp. Drain on paper towels and season with a pinch more salt. Oven method: Preheat oven to 425°F (220°C). Spread oiled potato pieces in a single layer on a parchment-lined baking sheet. Roast 20–30 minutes, flipping halfway, until golden and crisp. For extra crispness, broil 1–2 minutes at the end while watching closely.

Prepare green chiles

If using whole roasted chiles, remove skins and seeds, then chop to produce about 3/4 cup. If using canned diced green chiles, drain any excess liquid.

Assemble smothered fries

Place the hot fries in a large oven-safe serving basket or shallow baking dish. Evenly scatter about half of the shredded cheddar over the fries, then spoon the chopped green chiles over the cheese layer. Sprinkle the remaining shredded cheese on top so the chiles are sandwiched between cheese layers. Place under a broiler (or in a preheated 425°F oven) for 2–4 minutes until the cheese is fully melted and bubbly—watch carefully to avoid burning.

Finish and garnish

Remove the melted, smothered fries from the oven. Dollop sour cream across the top in several spoonfuls or drizzle it evenly. Sprinkle sliced scallions and crushed red pepper flakes (if using). Optionally add chopped cilantro and serve lime wedges on the side for squeezing over.

Serving

Serve the smothered fries immediately while hot and the cheese is gooey. Provide forks or napkins as needed. Leftovers can be reheated in a 375°F oven for 8–10 minutes to revive crispness (add fresh sour cream and scallions after reheating).
