Milk Preparation
For Scalding or Warming (optional)
Method
Milk Preparation
Warm or scald (optional)
Place the milk in a medium saucepan over medium-low heat. Stir gently and constantly with a heatproof spatula or whisk to prevent a skin from forming and to avoid scorching on the bottom. Warm until small steam bubbles form at the edges and the milk reaches 160°F (71°C) — it should be warm but not boiling. This takes about 5–8 minutes. If you prefer just warmed milk for drinking, heat to about 120–140°F (49–60°C) for 3–5 minutes. Remove from heat promptly when the desired temperature is reached.
Double boiler method (to avoid scorching)
If you prefer, set a heatproof bowl over a pot of simmering water (double boiler). Pour milk into the bowl and stir occasionally until warm or scalded. This method gives gentler, even heating and reduces risk of burning.
Cool or serve
For warm milk: pour into cups and serve immediately. For chilled milk: let the milk cool to room temperature (about 20–30 minutes), then transfer to a covered container and refrigerate until cold (at least 2 hours). Shake or stir before serving, as a thin skin may form on top and can be stirred back in or removed if desired.
Storage
Store prepared milk in the refrigerator in a sealed container for up to 3–5 days. Reheat gently on the stove or in the microwave, stirring frequently. Discard if it develops an off smell, sourness, or curdling.
