Prepare produce

Wash all greens, apple, cucumber, and celery thoroughly. Remove kale stems and core the apple. Peel cucumber if skin is waxed and roughly chop ingredients so they fit your juicer or blender chute.

If using a juicer: feed kale, spinach, cucumber, celery, apple, and ginger through the juicer in that order to maximize yield. Collect juice in a pitcher.

If using a blender: place kale, spinach, cucumber, celery, apple, ginger, lemon juice and 1 cup cold water in the blender. Blend on high until completely smooth (about 45–60 seconds).

Strain (optional): For a smoother texture, pour the blended mixture through a fine-mesh sieve or nut milk bag into a bowl, pressing to extract as much liquid as possible. Discard pulp or reserve for smoothies/compost.

Adjust and serve: Stir the juice, taste and add extra lemon or a pinch of salt if desired. Serve over ice cubes if using. Yields ~2 servings.

Carrot-Orange Vitality Juice

Prepare produce

Peel and chop carrots so they fit your juicer or blender. Juice two oranges or measure 1 cup fresh orange juice. Peel turmeric if using fresh.

If using a juicer: feed carrots, turmeric, and orange (if your juicer accepts citrus) through the juicer. If not, juice oranges separately and combine.

If using a blender: place chopped carrots, orange juice, turmeric, lemon juice and 1/4 cup water in the blender. Blend until very smooth (about 45–60 seconds). If too thick, add up to 1/4 cup more water.

Strain (optional): For a smoother juice, strain through a fine sieve or nut milk bag. Press to extract juice and discard pulp or save for baking/compost.

If using raw beet, wash and peel it; if it’s large, roast or boil until tender then cool and peel. Chop into small pieces. Wash berries and core and chop the apple.

If using a juicer: juice the beet, apple, and berries, finishing with lime juice to brighten the flavor. Collect juice in a pitcher.

If using a blender: place beet, berries, apple, lime juice and 1 cup cold water in the blender. Blend until smooth, about 45–60 seconds. Add more water if necessary to reach desired consistency.

Strain (optional): For a silky texture, strain the blended mixture through a fine-mesh sieve or nut milk bag, pressing to extract the juice. Reserve pulp for other uses or compost.
