Heat water

Bring fresh cold water to the appropriate temperature for the selected tea: for black teas (Earl Grey, English Breakfast) heat to just off boiling (~205–212°F / 96–100°C); for green tea heat to ~175–185°F (80–85°C); for herbal teas (Chamomile, Honey Lemon Ginseng, Peppermint) heat to boiling (~205–212°F / 96–100°C).

Steep

Place one house tea bag in a teacup or mug. Pour 8 oz (240 ml) of the hot water over the tea bag. Steep for the appropriate time: black tea 3–4 minutes, green tea 2–3 minutes, herbal teas 5–7 minutes. Adjust steep time to taste (longer for stronger, shorter for lighter).

Remove bag

Lift the tea bag out of the cup and gently press it against the cup edge with a spoon to extract remaining liquor if desired, then discard the bag.

Finish (optional)

Sweeten or adjust: stir in honey (~1 tsp) or sugar (~1 tsp) to taste while the tea is hot so it dissolves easily.

Add lemon: if using a lemon wedge, squeeze lightly into the tea and drop the wedge in or discard.

Add milk: for black teas, add about 2 tablespoons of milk if desired and stir. Do not add milk to delicate green or many herbal teas if you want to preserve their flavor profile.

Taste and adjust: taste the tea and add more sweetener, milk, or steep longer next time to reach your preferred strength.
