Cook bacon in a skillet

Place a cold, medium nonstick or cast-iron skillet on the stove. Arrange 3 bacon slices in a single layer. Turn heat to medium. Cook 3–5 minutes until the underside is browned, then flip with tongs and cook another 2–4 minutes until crisped to your liking. Adjust time for thickness. If the bacon is browning too quickly, reduce heat slightly.

When bacon is done, transfer to a plate lined with paper towel to drain. Reserve about 1 teaspoon of bacon fat in the pan if you prefer extra flavor for the toast or eggs; otherwise discard fat and wipe pan clean for eggs.

Toast the bread

While the bacon cooks (or right after), toast 2 slices of bread in a toaster or under a broiler until golden and crisp, about 2–3 minutes depending on appliance.

Butter the hot toast lightly with 1 tsp unsalted butter and set aside, keeping warm.

Prepare eggs

Crack 2 large eggs into a small bowl. Add 2 tablespoons whole milk, a pinch of salt and a pinch of black pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy (about 15–30 seconds). This yields a light, tender scramble.

Cook eggs

Use a clean nonstick skillet over medium-low heat. Add 1 teaspoon unsalted butter and let it melt, coating the pan. Pour the egg mixture into the pan. Let eggs sit undisturbed for 10–15 seconds until edges begin to set. Using a silicone spatula, gently push set edges toward the center and tilt pan so uncooked eggs flow to the edges. Continue folding every 10–15 seconds until eggs are softly set but still slightly glossy — about 1.5–2 minutes total. Remove from heat while slightly underdone; residual heat will finish them.

Taste and adjust seasoning with an additional pinch of salt and pepper if desired. If using chives or parsley, sprinkle on top now.

Assembly & serving

Arrange the buttered toast on a plate. Place the scrambled eggs beside or on top of one slice of toast if desired. Add the drained bacon slices alongside the eggs and toast.

Serve immediately with optional hot sauce or ketchup on the side. Estimated plating time: serve within 2 minutes so eggs remain warm and tender.
