Sear the Short Ribs

In a large pot, heat olive oil over medium-high heat. Season the beef short ribs with salt and pepper, then sear them in the pot until browned on all sides. Remove the ribs and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion, carrots, and celery. Sauté until the vegetables are softened. Add the minced garlic and cook for an additional minute.

Deglaze the Pot

Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for about 5 minutes.

Braise the Short Ribs

Return the short ribs to the pot. Add the beef broth, bay leaves, and dried thyme. Bring to a simmer, cover, and reduce heat to low. Braise for 2-3 hours, or until the meat is tender and falling off the bone.

Cook the Pasta

In a separate pot, cook the pasta according to package instructions until al dente. Drain and set aside.

Combine and Serve

Once the short ribs are done, remove them from the pot and shred the meat. Discard the bay leaves. Stir the shredded beef back into the sauce. Toss the cooked pasta with the beef mixture. Serve topped with grated Parmesan cheese and chopped fresh basil.
