Prepare the Sauce

In a small bowl, mix together mayonnaise, ketchup, mustard, and a pinch of salt and pepper. Set aside.

Cook the Onions

Slice the onion into thin rings. In a skillet over medium heat, add a little oil and sauté the onions until they are golden and caramelized, about 10 minutes. Remove from heat and set aside.

Form the Patties

Divide the ground beef into 4 equal portions (about 4 ounces each). Gently form each portion into a loose ball; do not overwork the meat.

Smash the Patties

Preheat a cast-iron skillet or griddle over high heat. Once hot, place the meat balls on the skillet and immediately smash them down with a spatula to about 1/2 inch thick. Season with salt and pepper.

Cook the Burgers

Cook for about 2-3 minutes until a crust forms. Flip the patties and place a slice of American cheese on each. Cook for another 1-2 minutes until the cheese melts.

Toast the Buns

While the burgers are finishing, split the sesame buns and toast them in the skillet until golden brown.

Assemble the Burgers

Spread the house burger sauce on the bottom half of each toasted bun. Place the lettuce, tomato slices, the cheesy burger patty, and the caramelized onions on top. Cap with the top half of the bun.

Serve

Serve the smash burgers immediately with your choice of sides.
